The team leans into a Miami-Cuban take on Texas barbecue, with a cafecito-laced rub on the ribs and mojo mustard on the sandwiches.
Order the brisket — smoked up to 24 hours and served sliced with smoked salsa roja, onions, and cilantro, or stacked on Texas potato toast as the brisket sandwich. The Cheshire spare ribs come glazed with the house oro negro and sold by the quarter or half pound. Round out the table with pulled pork, smoked chicken thighs, mac and cheese, cornbread, and the cheese bread that regulars order on every visit.
Walk-ins only — Apocalypse does not take reservations, so come early and come hungry.
